Simple Buttercream Icing

INGREDIENTS:

  • 90 g softened butter
  • 500 g icing (confectioner’s) sugar, sifted
  • 45 ml (3 tbsp) single (light) cream flavoured

 

INSTRUCTIONS:

Cream together the butter and sugar until light and fluffy, then add the cream and continue heating until smooth. Flavourings may be 2.5 ml (1/2 tsp) vanilla essence or 15 ml (1 tbsp) instant coffee dissolved in 5 ml (1 tsp) Cognac, or a little orange-flavoured liqueur, or grated orange or lemon rind. This makes enough to cover a 23-cm (9-in) cake.
