Grain-Free Sandwich Bread Recipe

INGREDIENTS:

  • 3/4 cup coconut flour, sifted
  • 1/4 cup ground flax meal
  • 2 tablespoons arrowroot powder
  • 1 teaspoon onion powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 tablespoons sesame seeds, divided use
  • 7 large eggs, lightly beaten
  • 2 tablespoons sour cream or Greek yogurt
  • 1/2 cup melted butter, ghee, or coconut oil

INSTRUCTIONS:

Preheat the oven to 180°C. Combine the flax meal, coconut flour, arrowroot powder, onion powder, baking powder, baking soda, salt, and 2 tablespoons of the sesame seeds in a large bowl. In a separate bowl, combine the eggs and sour cream. Beat the wet ingredients into the flour mixture.

Add the melted butter and beat to combine. Pour into a 9×5-inch loaf pan and sprinkle the top with the remaining 1 tablespoon of sesame seeds. Bake 40-50 minutes or until cooked through in the center. Cool completely before slicing.

This bread also toasts well.
