Butterscotch Icing Recipe

INGREDIENTS:

  • 60 g butter
  • 90 g brown sugar
  • pinch of salt
  • 75 ml evaporated milk
  • 2,5 ml vanilla essence

 

INSTRUCTIONS:

Put the butter, brown sugar, salt and evaporated milk in a bowl and stand in a pan of water over gentle heat. Alternatively, use a double boiler. Stir constantly until the butter has melted and the mixture is smooth. Remove from the heat and allow to cool slightly, then beat in the icing sugar and vanilla. You might need a little more or a little less icing sugar than stated, so don’t add it all at once.

Will generously cover the top and sides of a 25-cm (10-in) cake.
