Simple Royal Icing Recipe


Makes 1 1/2 cups

  • 1 large egg white
  • 1 1/2 cups sifted confectioners sugar
  • 1 tablespoon water


1. Place the egg white and confectioners’ sugar in a mixing bowl. Beat on low speed for 10 minutes, until the mixture has the consistency of thick cream or syrup.

2. 2. Test the consistency by drawing a knife through the icing and counting. If the mark disappears by the time you reach 10, you have the right consistency. Add water to thin, or confectioners sugar to thicken.

3. Store in an airtight container until ready to use.

If you are using meringue powder instead of egg white, out 1 tbsp of powder into 2 tbsp of water and stir until the powder is completely blended, and free of lumps. Add confectioners sugar and beat, as described above.
