Quick Gluten-free snacks recipe

INGREDIENTS:

  • 1/2 cup pitted dates
  • 1/2 cup dried mango
  • 2 tablespoons honey
  • 1 large egg, lightly beaten
  • 3 tablespoons sunflower seed butter (or any nut/seed butter)
  • 1/2  cup macadamia nuts, chopped
  • 1/2 cup walnuts, chopped
  • 1/2 cup almonds, chopped
  • 1/4 cup unsweetened coconut flakes
  • 1 tablespoon sunflower seeds
  • 1/4 cup mini dark chocolate chips

INSTRUCTIONS:

Preheat the oven to 100°С. Line a 9×9-inch baking dish with parchment paper. Place the dates and dried mango in a food processor and pulse until “gooey.”

Transfer to a large mixing bowl. Add the remaining ingredients in the order listed and mix thoroughly. Transfer the mixture to the lined baking dish and press down thoroughly and evenly. Using a pizza cutter, cut the unbaked mixture into 12 bars.

Bake for 45-60 minutes until the middle is firm. Let cool completely, then cut into 12 bars on the pre-cut lines. Wrap each bar individually in parchment paper.
