Passionfruit Icing Recipe

INGREDIENTS:

  • 185 g icing (confectioner’s) sugar
  • 5 ml ( 1 tsp) butter
  • pulp of 2 passionfruit

 

INSTRUCTIONS:

Sift the icing sugar into a bowl, add the butter and enough passionfruit pulp to mix to a stiff paste. Put the bowl over a pan of simmering water, and heat for I minute, stirring constantly, or until the icing has thinned a little. Remove from heat, add remaining passionfruit and spread over the top of a cake.

Enough to cover the top of a 25-cm (9-in) cake.
