Madeira Sponge Cake

INGREDIENTS:

  • 2 cups buffer or soft margarine, room temperature
  • 2 cups sugar
  • 9 medium eggs
  • 4 tablespoons milk or citrus juice
  • 4 1/4 cups oil purpose flour
  • 2 1/2 teaspoons baking powder

INSTRUCTIONS:

Preheat oven to 325°F. Grease a 10-inch round cake pan and line with parchment paper. Make sure the parchment paper extends beyond the top rim of the pan, so that the cake has room to rise.

Cream the butter and sugar until light and fluffy, about 5 minutes If you are using an electric mixer. Add the eggs one at a time, beating well after each addition. Add the milk and mix. In a separate bowl, sift the flour and baking powder. Blend the mixtures together using a wooden spoon, then beat until smooth and glossy.

Pour the batter into the prepared pan and level the top with a spatula.

Place the cake in the center of the oven and bake for 1 to 2 hours, or until a toothpick inserted into the center comes out clean.

Cool the cake for 30 minutes, then turn it out onto a wire rack and set aside until completely cool.
