Devil’s Food Cake with Butter Filling & Chocolate Frosting
INGREDIENTS:
- 90 g butter or margarin
- 250 g brown sugar
- 2 eggs, beaten
- 125 g plain (semisweet) chocolate, melted
- 315 g plain (all-purpose) flour
- 10 ml (2 tsp) bicarbonate of soda
- pinch of salt
- 250 ml milk
- 5 ml vanilla essence
INSTRUSTIONS:
Beat the butter and sugar until light and fluffy. Add the egg gradually, beating well Blend in the melted chocolate. Sift the flour, salt and bicarbonate of soda together and add alternately with the milk and vanilla essence to the chocolate mixture. Hour into 2 well greased and lined 20-cm (8-in) cake tins (pans) and bake at 180°C (350°F, Cas 4) for 35 minutes or until cooked. Leave to stand for 5 minutes before turning on to a wire rack to cool. When completely cold fill with Butter Filling and ice with Chocolate Frosting.
Butter Filling Recipe:
- 90 g unsalted butter
- 185 g icing (confectioner’s) sugar
- 15 ml (1 tbsp) milk
Cream the butter and gradually add the icing sugar and milk.
Chocolate Frosting Recipe:
- 185 g plain (semisweet) chocolate, chopped
- 625 g icing (confectioner’s) sugar, sifted
- 30 ml (2 tbsp) hot water
- 2 eggs yolk
- 90 g unsalted butter, melted
Melt the chocolate in a bowl over warm water. Stir in the icing sugar and hot water and beat in the egg yolks. Beat in the melted butter very slowly.
