Cream Cheese Icing Recipe
- 125 g icing (confectioner’s) sugar
- 90 g cream cheese
- 30 ml (2 tbsp) single (light) cream
- 1 1/2 tsp grated lemon or orange rind
Excellent on carrot cakes.
Sift the icing sugar. Beat the cream cheese with the cream until soft and fluffy. Gradually add the icing sugar, beating constantly, then the grated rind. Enough to cover a 2 3-cm (9-in) cake.
