Coffee Icing Recipe
INGREDIENTS:
- 185 ml very strong black coffee
- 185 g icing (confectioner’s) sugar
INSTRUCTIONS:
For a rich cream-filled layer cake.
Put 185 ml very strong black coffee into a pan and add 185 g icing (confectioner’s) sugar . Warm over low heat, stirring constantly and adding more icing sugar until the mixture is a heavy cream. Cool slightly and pour over the top of the cake. A delicious way to decorate a cake covered with coffee icing is to sprinkle at thickly with finely ground pistachio nuts.
Enough to for a 23-cm (9-in) cake.
