Chocolate Icing

INGREDIENTS:

  • 125 ml single (light) cream
  • 250 g plain (semisweet) chocolate

INSTRUCTIONS:

This is superb on a rich chocolate cake.

Scald the cream in a small saucepan and add the chocolate, broken into pieces. Leave on a low heat for 1 minute, then remove the pan from the heat and stir the chocolate into the cream with a wire whisk until the chocolate has melted and the mixture is smooth.

Place the pan in a bowl of cold water to prevent the icing cooking further and leave to stand for 15 minutes, stirring occasionally before you use it.  This will generously cover the top and sides of a 23-cm (9-in) cake.
