Chocolate Glaze
INGREDIENTS:
- 60 g plain (semisweet) chocolate
- 60 g butter
- 10 ml honey
INSTRUCTIONS:
This gives a shiny finish to rich chocolate cakes.
Break up the chocolate and put it, with butter and honey in the top of a double boiler, or in a heatproof bowl standing over, not in, a pan of simmering water. Allow the mixture to melt, then remove the pan from the heat and beat the mixture until it is cold and begins to thicken. Pour over the top of the cake and allow to run down the sides, smoothing with a metal spatula. Enough to coat the top and sides of a 23 cm (9-in) cake.
