Browned Butter Frosting Recipe

INGREDIENTS:

  • 125 g butter
  • 625 g icing (confectioner’s) sugar
  • 45 ml (3 tbsp) single (light) cream
  • 5 ml (1 tsp) vanilla essense
  • 30 ml grated lemon or orange rind

 

INSTRUCTIONS:

Exceptionally good on carrot cake.

Heat the butter in a frying pan over moderate heat until it browns lightly. Pour the butter into a bowl and add the sugar. Beat well and stir in cream, vanilla and grated rind. This will cover a 25-cm (10-in) cake.
